Thailand - Food - Roti Pancake - Rotee
The Roti or Rotee pancake available in Thailand is an unleavened bread-dough pancake or chapatti like food cooked on a slightly concave griddle, or in a large flat pan.
The mobile roti maker shops found on street corners sells just about the cheapest street food available in Thailand - We say the basic plain roti bread on sale for as little as 3 baht.
Thai street pancake rotee recipe - The roti skin recipe appeared to be flour, water and vegetable oil mixed and kneaded until pliable. It is one of the worlds most basic foods - and tasty too.
The roti maker takes a measured amount of dough and flattens it out on a board until an opaque dough disc, the roti skin, is formed about the size of a large dinner plate.
Then the roti skin is placed on the lightly oiled griddle and cooked until slightly brown. The roti is then turned and cooked on the other side. The roti maker then adds your choice of filling to the roti bread pancake. The cheapest sweet roti we sampled was one with a sugar and condensed milk filling - usually about 10 baht.
The picture left shows a typical roti hut on wheels found in most night markets or just in the street.
Look for the roti hut that is well patronised by Thais - you are sure to get a good roti that way. Make sure that any street food you buy they are cooking fresh to order to avoid any problems with 'tummy bugs'.
