Chiang Mai's Spicy SausageChiang Mai is known nationally in Thailand for its spicy sausage. It looks like a Cumberland sausage but contains chili and local herbs.

The meat is coarsely minced fatty pork and it would appear that the chewy skins are the pigs own intestines, not the edible plastic things we get in the UK.

Chiang Mai's Spicy Sausage - PortionThey sold the sausage cooked and sliced by weight. I bought 100 gramme's for 25 baht from this stall. It was presented in a fresh plastic bag with an eating stick. I wouldn't say piping hot but seemingly hot and steamy enough to avoid food poisoning. A tasty little number that I would eat again by choice.
