Thailand Recipes - Tom Yam Kung - Spicy Shrimp Soup
If you ask anybody who has ever visited Thailand what their favourite Thai
food was - the answer would almost certainly be tom yam kung.
Tom yam kung is spicy shrimp soup - The dish is number one in the top
ten Thai dishes ordered by foreigners and Thais alike.
The reason is simply because it is absolutely delicious - with a spicy-sour
taste that keeps you going back for more! The dish is reputed to have medicinal
properties too!
Ingredients:
Water 0.5 litre
Large shrimps in shells 10 - 12
Mushrooms of your choice 200g - sliced
Lemon grass stalk (chopped into 2cm pieces)
Kaffir-lime leaves 2
Coriander leaves (chopped fine) to taste
Red and green chillies sliced - seeds removed!
Ground chilli to taste
Salt - pinch
Lime - juice of a lime
Fish sauce 2 tbl sp
Method:
Pour the water into a deep pan and add the chopped lemon grass and
kaffir-lime leaves and bring to the boil.
Add the shrimps and salt - cover for about three minutes then add
the sliced mushrooms, sliced chilli and kaffir-lime leaves. Lower
the heat and simmer for five minutes, then remove from the heat.
When the liquid stops moving add the fish sauce and ground chilli.
Just before serving sprinkle with the chopped coriander.
